chocolate cornflake cakes

makes 8 cakes

Ingredients:

  • 150 grams cornflakes (I use whole earth cornflakes)

for the chocolate:

  • 90 grams cocoa butter

  • 60 grams of any sweetener of your choice (I use coconut sugar or maple syrup)

  • 60 grams raw cacoa powder (or standard cocoa powder works just fine)

PS if you want to use use pre made chocolate that’s also perfect for convenience :) I love the divine brand!

Method:

  • if making your own chocolate, heat cacoa butter over in a glass bowl placed over pan of boiling water.

  • once melted, add sugar and cacoa powder and stir together.

  • if using pre made chocolate, add in to glass bowl and allow to melt.

  • place cornflakes in a mixing bowl, pour over chocolate and combine all ingredients together.

  • using muffin cases, spoon cornflake mixture into each case, then place in the freezer for 20 minutes to set.

  • enjoy! the cakes will freeze for up to 8 weeks.
