chocolate and raspberry truffles

makes 20-25 truffles

ingredients:

  • 500 grams medjool dates (pitted)

  • 1 cup of oats or ground almonds

  • 1/2 cup freeze dried raspberries

  • 4 tbsp raw cacao powder

  • 4-5tbsp water

method:

  • place all the ingredients into a food processor and whizz together until a dough forms.

  • roll into 20-25 balls

  • roll in additional cacoa powder to create a truly professional and truffle like finish

  • store in the fridge for up to 2 weeks and freezer for up to 1 month in an airtight container.
