chocolate and raspberry truffles
makes 20-25 truffles
ingredients:
500 grams medjool dates (pitted)
1 cup of oats or ground almonds
1/2 cup freeze dried raspberries
4 tbsp raw cacao powder
4-5tbsp water
method:
place all the ingredients into a food processor and whizz together until a dough forms.
roll into 20-25 balls
roll in additional cacoa powder to create a truly professional and truffle like finish
store in the fridge for up to 2 weeks and freezer for up to 1 month in an airtight container.
