Potato wedges with guacamole and hummus

makes 1 serving

Ingredients:

  • 2 medium sided baking potatoes

  • smoked paprika

  • garlic powder

  • 1 serving hummus (see recipe in savoury snacks section)

guacamole:

  • 1/2 large avocado

  • 1/2 lime (juice of)

  • 1 pinch sea salt or pink Himalayan salt

  • 1 tbsp chopped coriander

Method:

  • Preheat oven to 220 degrees delicious (200 fan assisted)

  • chop potatoes in wedge shapes, place in a bowl and toss with paprika and garlic powder

  • place on a baking tray or rack, then pop in the oven for 25-30 minutes until golden brown

  • make the guacamole my mashing the avocado in a bowl, then add the other ingredients and mix together until all ingredients are combined.

  • add hummus and a lovely side salad and enjoy!
