Potato wedges with guacamole and hummus
makes 1 serving
Ingredients:
2 medium sided baking potatoes
smoked paprika
garlic powder
1 serving hummus (see recipe in savoury snacks section)
guacamole:
1/2 large avocado
1/2 lime (juice of)
1 pinch sea salt or pink Himalayan salt
1 tbsp chopped coriander
Method:
Preheat oven to 220 degrees delicious (200 fan assisted)
chop potatoes in wedge shapes, place in a bowl and toss with paprika and garlic powder
place on a baking tray or rack, then pop in the oven for 25-30 minutes until golden brown
make the guacamole my mashing the avocado in a bowl, then add the other ingredients and mix together until all ingredients are combined.
add hummus and a lovely side salad and enjoy!
