Peanut chilli noodle stirfry

serves 1

Ingredients:

  • small handful cashew nuts

  • 1 portion brown rice noodles

  • 1 carrot sliced into thin strips

  • 2 spring onions finely sliced

  • 1/4 red pepper

  • 4 mushrooms

  • 1 tbsp peanut butter

  • 1 tbsp tamari (wheat free soy sauce)

  • 1 tbsp maple syrup

  • 1/4 finely chopped red chilli

  • a few sprigs of coriander

method:

  • cook brown rice noodles as per the instructions.

  • place all vegetable in a frying pan and cook in a little water for 2-3 minutes

  • add cooked noodles to the pan

  • mix peanut butter, tamari, an maple syrup together in a dish, then add to the frying pan.

  • stir sauce through noodles and vegetables, pour into a dish, then sprinkle with cashew nuts, chill, and coriander.
