Peanut chilli noodle stirfry
serves 1
Ingredients:
small handful cashew nuts
1 portion brown rice noodles
1 carrot sliced into thin strips
2 spring onions finely sliced
1/4 red pepper
4 mushrooms
1 tbsp peanut butter
1 tbsp tamari (wheat free soy sauce)
1 tbsp maple syrup
1/4 finely chopped red chilli
a few sprigs of coriander
method:
cook brown rice noodles as per the instructions.
place all vegetable in a frying pan and cook in a little water for 2-3 minutes
add cooked noodles to the pan
mix peanut butter, tamari, an maple syrup together in a dish, then add to the frying pan.
stir sauce through noodles and vegetables, pour into a dish, then sprinkle with cashew nuts, chill, and coriander.
