no bake chocolate brownies

Ingredients:

brownie base:

  • 150 grams oats

  • 100 grams ground almonds

  • 4 tbsp maple syrup

  • 2 tbsp water

  • 100 grams nut butter (cashew, almond or peanut butter work well)

  • 50g raw cacao powder

chocolate topping:

  • 50 grams raw cacao powder

  • 124ml maple syrup

  • 50 grams cashew butter

  • 100 grams coconut oil (melted)

Method:

  • blitz the dry ingredients in a food processor before adding the nut butter, maple syrup and cashew butter and blitzing again until a dough forms.

  • spread the dough into a 20cm x 20xm brownie tin lined with baking parchment.

  • make the chocolate topping by mixing all the ingredients together to form a glossy smooth consistency.

  • pour the chocolate topping over the brownie base and smooth over with the back of a spoon.

  • place in the freezer for 15 minutes to set, then sprinkle with raw cacao powder to finish before cutting into 12 squares.

  • store in the fridge for up to 2 weeks, or freezer for up to 2 months.
