Raspberry, Lemon & Coconut Energy Balls
Makes 24 balls
Free from wheat, dairy, gluten, and refined sugar.
Ingredients:
24 medjoul dates
1 cup of ground almonds (can substitute for oats if you prefer super, super low fat!)
1/4 to 1/2 cup freeze dried raspberries or fresh raspberries.
2 tbsp fresh lemon juice or 1-2 tsp lemon extract
Desiccated coconut for decoration.
Method:
Pit all the dates and add to a food processor with the almonds, and lemon juice, blending for a couple of minutes or until a dough forms.
Add the raspberries and pulse to combine gently.
Take the dough out the food processor and roll into balls.
Place coconut in a bowl, and roll each ball until fully coated.
Refrigerate for 30 minutes to set, then serve!
These treats will last 3-4 days in the fridge if using fresh raspberries, and up to 12 weeks in the freezer.
