Raspberry, Lemon & Coconut Energy Balls

Makes 24 balls

Free from wheat, dairy, gluten, and refined sugar.

Ingredients:

  • 24 medjoul dates

  • 1 cup of ground almonds (can substitute for oats if you prefer super, super low fat!)

  • 1/4 to 1/2 cup freeze dried raspberries or fresh raspberries.

  • 2 tbsp fresh lemon juice or 1-2 tsp lemon extract

  • Desiccated coconut for decoration.

Method:

  1. Pit all the dates and add to a food processor with the almonds, and lemon juice, blending for a couple of minutes or until a dough forms.

  2. Add the raspberries and pulse to combine gently.

  3. Take the dough out the food processor and roll into balls.

  4. Place coconut in a bowl, and roll each ball until fully coated.

  5. Refrigerate for 30 minutes to set, then serve!

These treats will last 3-4 days in the fridge if using fresh raspberries, and up to 12 weeks in the freezer.
